Winery

We are Dva duby (means Two oaks) winery.
And since 2007 we have been producing strictly terroir wines from Dolní Kounice.
What is terroir? And why is the terroir of Dolní Kounice so special?

Winery

We manage 6 hectares of old vineyards (average age is 45 years) with plot names Karlov, Šibeniční hora and Nová města.
All of our vineyards are situated on a unique bedrock, a 650 million year old volcanic (properly said rather magmatic) igneous rock, granodiorite.

Vines growing on rock function differently than vines growing on fertile soil. They have to build a deep root system to get enough water and nutrients.
They have to fight for life. They produce fewer grapes, but such grapes are more intense in flavour, more complex and more exceptional.
The grapes are the reflection of their birthplace, the reflection of the vineyard, and the wine is born from the grapes.

That is why Dolní Kounice is a grand and powerful terroir.

Vineyard - granodiorit

But a grand and powerful terroir is just the foundations.
By working in the vineyard (and then in the cellar), terroir can be preserved. But unfortunately, even strong terroir can be destroyed by improper work.

That is why we only use organic and biodynamic preparations and practices in the vineyards.
We do not use any fertilizers.
We work with the soil, to create a functioning ecosystem.
And we go to the limit in this, because only vines that are forced to form a deep and extensive root system produce grapes that are a true reflection of their place of origin, the vineyard.

And then we follow the same pattern in the production of wine.
We do not rush, the wines are given all the time they need to develop and ripen in a relaxed way, without being hurried and without unnecessary interventions and additives.

In fact, all this can be simplified into the following two statements:

Only grand terroir can produce great wines.
Only the old and living vineyard can express terroir in its full beauty and strength.
